      The Production of Terres Bleues 2022 Nowack Champagne

      The Terroir

      The Vandières vineyard, in the Marne Valley, is home to this single-vineyard cuvée. The vines are planted on a high hillside at an elevation of 180 meters, with an exposure that favors the ripening of the Meunier grape. The vines were planted in 1975. Natural winter cover crops and mechanical soil cultivation promote deep root growth. Biodynamic preparations strengthen the vines’ natural defenses and stimulate the soil’s microbiological activity. The topsoil consists mainly of light, well-draining sand, resting on hard, fossil-bearing limestone.

      At a depth of one meter, a layer of illite appears—this blue marl is geologically characteristic of the region. The absence of synthetic fertilizers causes the roots to penetrate this mineral layer to draw water and buried minerals. This absorption imparts a distinctive tension and salinity to the future wine.

      Winemaking

      Meunier makes up the entirety of this single-vineyard wine. Flavien Nowack takes a minimally interventionist approach: fractional pressing gently separates the juices, and the estate isolates the must to preserve its purity. Alcoholic fermentation is carried out using indigenous yeasts (yeasts naturally present on the vines and in the cellar) at strictly controlled temperatures in small oak barrels. The winemaker deliberately halts malolactic fermentation, thereby preserving the grapes’ initial total acidity.

      Aging on lees in oak lasts approximately ten months. Micro-oxygenation induced by the oak shapes the character of the clear wine. Bottling, carried out without prior fining or filtration, took place in July 2023. A cork stopper with a wire clip replaces the crown cap. This method enhances yeast autolysis (the breakdown of dead yeast cells, which enriches the wine with complexity) and imparts subtle tertiary notes.

      Aging on racks continues in the darkness of the cellars. Disgorgement is performed manually in a single pass. The wine is a Brut Nature with zero dosage (0 g/L).

      The 2022 Harvest

      In Vandières, the 2022 growing season featured an early vegetative cycle. Spring saw more sunshine than the ten-year average, and flowering took place under optimal conditions. The scorching summer was tempered by the illite layer, which retains winter precipitation and releases it deep into the soil, thereby limiting water stress for the vines.

      Yields were lower than the limits authorized by the appellation, promoting aromatic concentration. The harvest began in late August under high-pressure conditions, with rigorous manual sorting: berries affected by sunscald were discarded. Immediate pressing minimized oxidation of the must. The Meunier grape thus retains a well-balanced acidity, with optimal concentration of natural sugars. This sun-drenched harvest produces structured wines with distinct ripeness.
