Pie Danse is a cuvée with character from Maxence Janisson. The result of artisanal, dedicated work on a single organically farmed plot, this 100% Pinot Noir champagne expresses all the uniqueness of its terroir. It is also a cuvée marked by the precision of a passionate winemaker. A vibrant, unpretentious wine that combines intensity, finesse, and naturalness.
The Pie Danse cuvée comes from a plot planted in 1981 on 41B rootstock. The terroir, located halfway up the hillside, rests on brown limestone soils over heavy clay, which give this Pinot Noir concentration and tension.
The vineyard is cultivated according to the principles oforganic farming, without chemical fertilizers or synthetic products. This approach, which respects the soil and the plant, allows the terroir's identity to fully express itself.
The grapes were harvested at 10.5° in September 2021. Vinification is carried out naturally:
The wine is then aged for 24 months on slats before disgorging. The dosage is 1 g/L and prepared in the traditional way ("minute") to ensure the pure expression of the fruit and its terroir.
The Pie Danse cuvée has a pale golden yellow color, bright and lively with fine, regular bubbles.
The nose reveals precise aromas of crisp red fruits, white pepper and beeswax, enhanced by a delicate mineral touch.
On the palate, this champagne offers a lively and direct attack, with a straight and taut texture. The finish, slightly salty, evokes flint and candied citrus fruits.
