Maxence Janisson is one of Champagne's rising stars. He cultivates 4.5 hectares on the southern slopes of Epernay, divided between Chardonnay (60%), Pinot Noir (25%) and Meunier (1%). The organically-farmed vines, drawn from gypsum-rich chalky-clay soils, nurture champagnes with vibrant minerality and saline energy. Its first cuvée, "Pie Danse", is a 100% Pinot Noir Extra-Brut (dosage 1 g/l) from the 2021 vintage: just 3,199 bottles, all barrel-aged to gain flesh without losing tension. The wine combines crisp red fruit, a hint of smoke and a saline finish, reflecting precise craftsmanship and deliberately low yields .
