Maxence Janisson is one of the rising stars of Champagne. He cultivates 4.5 hectares on the southern slopes of Epernay, divided between Chardonnay (60%), Pinot Noir (25%) and Meunier (1%). The vines, grown organically in gypsum-rich clay-chalk soils, produce champagnes with vibrant minerality and saline energy. His first cuvée,
"Pie Danse,"is a 100% Pinot Noir Extra-Brut (dosage 1 g/l) from the 2021 vintage: only 3,199 bottles, all aged in barrels to gain body without losing tension. The wine combines crisp red fruits, a hint of smoke and a salty finish, reflecting precise craftsmanship and a deliberately low yield.
