Les Echansons Mailly Grand Cru is the house's prestige cuvée. It's a champagne that will resonate with noble dishes such as scallops, lobster or langoustines.
A blend of 75% Pinot Noir and 25% Chardonnay, this cuvée has been vinified and aged in stainless steel vats to allow the terroir to express itself in its purest form. Only made in very good years, the blend favors wines with exemplary ageing potential. The most elegant Chardonnays are blended with the most powerful and racy Pinot Noirs.
The dosage is Extra Brut, around 6g/l.
Cuvée Les Echansons by Mailly Grand Cru is a brilliant gold color with amber highlights. Its bubbles are fine and its mousse persistent.
On the nose, this cuvée offers beautiful notes of perfectly ripe fruit (pear, mirabelle plum) and candied fruit (lemon, tangerine) blended with delicate hints of almond, pastry, honey and caramel.
On the palate, this champagne offers a remarkable balance of freshness and fullness, with buttery, spicy notes blossoming with subtlety, giving the whole a perfume of great maturity. The persistent mineral note, like an obvious signature, extends the line and accentuates the brilliance and purity of this wine.
