The making of L'aventure Les Frères Mignon champagne

This cuvée was created in 2019, when Florent and Julien Mignon decided to forge their own identity as winemakers after selling their grapes for many years. L'aventure is their first cuvée, emblematic of their artisanal and committed approach.

The L'aventure cuvée is made from:

      • 100% Chardonnay: a single grape variety that brings great finesse, refreshing tension and subtle aromas of citrus and white flowers.

      The terroir

The grapes come from three iconic villages in the Côte des Blancs:

      • Cramant: a Grand Cru classified terroir, renowned for its chalky soil. It brings a mineral structure and saline tension.
      • Avize: another renowned Grand Cru, which gives the wine its floral elegance and freshness.
      • Cuis: the northernmost Premier Cru village, known for its lively, taut wines, which add vibrant acidity.

This marriage of prestigious crus gives the L'aventure cuvée a highly precise aromatic signature.

      Vinification

The Mignon brothers practice natural winemaking, without fining or filtration. Fermentation occurs spontaneously with indigenous yeasts to respect the identity of the vintage and the terroir. The juices ferment in oak barrels (barriques and demi-muids), bringing roundness and complexity.

The wine is then aged for 12 months in barrels, then bottled for 26 months of aging on lees. Disgorging is carried out without excessive additions, with an Extra-Brut dosage of around 1.5 to 3.2 g/L, to preserve the purity of the wine.

      The non-vintage vintage

The L'aventure cuvée is a blend of several years (notably the 2017, 2018 and 2019 vintages, depending on the draw). This allows for a harmonious balance of freshness, maturity and complexity. The reserve wines, aged in barrels, add patina and a beautiful aromatic length. This is a non-vintage cuvée designed to express the style of the house rather than that of a specific year.

      Tasting notes

      • Color

The color of the "L'aventure" cuvée is a bright straw yellow, punctuated by very fine, regular bubbles. It immediately evokes the freshness and elegance of a pure Blanc de Blancs.

      • Nose

The nose reveals a vibrant freshness dominated by ripe citrus fruits (lemon zest, grapefruit), white flowers (acacia, orange blossom) and a hint of buttered brioche. With aeration, touches of candy sugar and fresh almonds appear.

      • Palate

On the palate, this champagne reveals a lively and precise attack. The saline minerality quickly takes over, supported by a lemony tension. The texture is silky, underscored by notes of green apple, toasted almond and toasted bread. The finish is long, spicy and sapid, with a very pleasant saline return.

      Storage and serving tips

      Store this champagne

The L’aventure Les Frères Mignon cuvée is best stored in a cool place (10-12°C), awayfromlight and vibrations. The bottle should be stored lying down to keep the cork moist and ensure a good seal. A natural cellar or a stable electric wine cellar is ideal.

      Aging potential

Produced without a vintage, this cuvée can be enjoyed within 5 to 7 years of disgorgement. It gains roundness after an additional 1 to 2 years. In a standard bottle, it will reach its peak between 2026 and 2028 if stored in good conditions.

      Serving

Serve this champagne between 9 and 10°C in a tulip glass to bring out its delicate aromas. Decanting is not necessary, but open the bottle 5 to 10 minutes before serving to allow it to breathe slightly.

      Anecdote about this cuvée

The name "L'aventure" (the adventure) was not chosen at random. It is a direct reference to the leap of faith taken by the two brothers when they decided to start their own winery in 2019. After years of working for others and selling their grapes, they launched their very first cuvée, symbolizing their commitment to the terroir, freedom, and excellence. An adventure that is just beginning...
