Committed to respectful viticulture (conversion to organic farming), Julian Gout has created a wine without artifice: vinified by gravity, with very little sulfite and stirred by hand. It is a champagne with character, vinous and structured, combining the intensity of red fruit with a vibrant minerality.
This champagne is 100% Pinot Noir from a mass selection dating back to 1971. The grapes come exclusively from the "Les Milieux" vineyard in Romery. The vineyard has been in conversion to organic farming since 2021, guaranteeing healthy and vibrant fruit.
The work in the cellar is carried out with great precision: traditional pressing (2,000 kg of marc) and the use of homeopathic doses of sulfur only during this stage. The wine is aged on whole lees and moved by gravity to avoid any stress. True to tradition, riddling and disgorging are done manually. The dosage is Extra-Brut, very low, to allow the terroir to express itself freely.
Made from the 2022 harvest, this champagne benefits from the beautiful maturity of the year. On the Romery terroir, the Pinot Noir was able to develop intense aromatics while retaining the structure necessary for a great gastronomic wine.
The color is a deep gold with slightly coppery highlights, characteristic of Pinot Noir. The effervescence is fine and forms a delicate cordon.
The nose offers a beautiful aromatic intensity, typical of great Pinot Noirs. It opens with delicious notes of red fruits (cherry, raspberry) and peach, enhanced by subtle spicy touches.
On the palate, the wine is structured and vinous. It has a beautiful texture balanced by freshness. The finish is dry, elegant and marked by a refreshing minerality, the signature of Extra Brut.
Store this bottle horizontally, away from light and in a cool cellar (68-54°F). Vinified with very little sulfur, it requires careful storage to preserve its brilliance.

Serve this cuvée between 10°C and 12°C. A temperature that is too low would mask the aromatic richness of the Pinot Noir. A flared white wine glass is ideal to allow it to open up.
The name "Les Milieux" refers to the specific cadastral location where these old vines from 1971 are planted. By isolating this plot and limiting mechanical interventions (gravity, manual stirring), Julian Gout seeks to capture the very essence of this micro-terroir in Romery, a village in the Marne Valley renowned for its Pinot Meunier, but which excels here in Pinot Noir.
