Julian Gout embodies the talented and ambitious new generation of Champagne producers. Currently cellar master at Maison Ayala, Julian Gout trained with some of the biggest names in the industry, each with their own distinctive style: Anselme Selosse, Henri Giraud, and Taittinger. He is part of a generation of winemakers with a strong ecological conscience, seeking to produce wines with a distinct identity, using as few artificial additives as possible. His personal project stands out for its artisanal and confidential nature. His estate, located in Romery in the Marne Valley, is in the process of converting to organic farming.
Julian Gout champagnes are signature champagnes, produced in very limited quantities. His signature cuvée, La Cène, is a Blanc de Noirs from a historic plot planted in 1971, known as "Les Milieux" in Romery. An unpretentious wine vinified by gravity (so as not to "shock" the wine), with very low sulfite levels and stirred by hand. A champagne with character, vinous and structured, combining the intensity of red fruit with a vibrant minerality.
