Clos de Cumières 2013 is made from two iconic grape varieties: Pinot Noir and Chardonnay. Grown in Hervé Jestin's own vineyards in the Cumières terroir, these grapes are meticulously cared for and harvested in accordance with the natural cycles. Every step, from the vineyard to the cellar, is part of a philosophy deeply connected to the rhythms of nature and the influences of the planets.
Alcoholic fermentation is guided by the inner planets of the solar system, while the outer planets influence malolactic fermentation from March onwards. This work, carried out with careful attention to the wine, allows each stage of its development to be closely monitored. The Clos de Cumières 2013 is thus the result of a perfect symbiosis between human intelligence and natural forces.
This cuvée is vinified and aged in stainless steel vats. The bottles are then aged in the cellars of the house, where they develop a silky texture and remarkable aromatic depth.
The 2013 Clos de Cumières has a bright golden color, enhanced by subtle highlights. The effervescence is delicate and persistent.
