The 2012 Celebris is Maison Gosset's exceptional cuvée, with the 2012 harvest expressing its full potential. This 2012 vintage is only the ninth edition of the Celebris cuvée in the last 35 years.
This champagne is a blend of 70% Chardonnay and 30% Pinot Noir. The grapes come from the finest terroirs in Champagne (Ambonnay, Avenay, Avize, Aÿ, Bouzy, Cramant, Cuis, Cumières, Trépail, Le Mesnil-sur-Oger, Louvois, etc.).
The wines are vinified and aged in stainless steel vats, with malolactic fermentation blocked to allow the aromas to fully express themselves and to obtain great aging potential.
Once the wine is bottled, the bottles are taken down to the cellar where they develop their aromas for 10 years. This champagne has a low dosage of 5.5 g/L to maintain the balance between freshness, fruitiness and vinosity without masking the character and purity of the wine.
This cuvée has a bright, golden color with fine, crystalline bubbles.
The nose is marked by the freshness of pear and citrus notes, including sweet orange and grapefruit. It then opens up to delicious aromas of pear tart and almonds.
On the palate, the wine is structured and offers depth, with tension and beautiful density. The attack opens with citrus and vanilla flowers, then evolves towards aromas of gooseberry, raspberry, and red cherry with yellow flesh.
The 2012 Celebris vintage is ideal as an aperitif or with a meal. It pairs well with exotic cuisine such as plantain, veal with pineapple, pork with prunes, and lemongrass chicken skewers, as well as monkfish, sea bass in a salt crust, and steamed fish.
