The magnum highlights Georges Laval's pure and honest style. It is a cuvée that emphasizes the uniqueness of the Cumières terroir, enhanced by the skill of the winemaker, Vincent Laval.

The terroir

Located on the right bank of the Marne, the Cumières Premier Cru terroir benefits from a south-facing exposure and a unique warm microclimate. The soils are a mixture of chalk, light clay, and sand, bringing aromatic richness and mineral precision. The vineyard has been certified organic since 1971 and is meticulously tended with natural grass cover, plowing between rows, enhanced biodiversity, and controlled yields. This artisanal approach produces intense, salty wines with great energy.

Vinification

Fermentation takes place in oak barrels without any additives: no chaptalization, indigenous yeasts, weekly topping up. The second fermentation takes place in magnums, where the evolution is slower, refining the texture and amplifying the aromatic depth. Disgorging is carried out without dosage (0 g/L), for the purest possible expression of the Cumières terroir.

How to store this cuvée

Store Cumières Premier Cru 2021 in magnum bottles at 10–12°C in a dark, stable cellar with 70% humidity. Thanks to its structure and natural aging, this magnum will slowly develop aromas of dried fruit, candied citrus, and noble chalk.

Aging potential

Aging potential: 10 to 15 years. The first 5 years favor tension and lemony purity. Between 6 and 12 years, the wine gains in fullness, brioche notes, and creamy texture. At the end of its aging period, the maturity becomes deeper, saline, and harmonious. The magnum prolongs the evolution for an additional decade.
