The 2020 Gastronome champagne is made from 100% Chardonnay, mainly from the grands crus of the Côte des Blancs. This 2020 vintage expresses all the subtlety of iconic terroirs such as Cuis 1er Cru, Cramant Grand Cru, Chouilly Grand Cru, and Oger Grand Cru. The 2020 harvest was particularly marked by favorable weather conditions, with balanced temperatures, resulting in grapes of optimal ripeness and beautiful acidity.
Vinification involves fractional pressing and temperature-controlled fermentation, followed by malolactic fermentation. The wine is aged in vats for eight months, then aged on lees in the bottle for over three years, giving the cuvée structure and complexity. This cuvée is then dosed at 5 g/L, a light dosage that preserves all the purity of the Chardonnay.
The 2020 Gastronome cuvée has a beautiful pale yellow color with golden highlights that evoke the elegance of its terroir.
On the nose, the champagne reveals aromas of fresh citrus fruits, accompanied by subtle floral notes and white fruits such as pear and apple.
