The 2019 Mont de Tauxière cuvée from Georges Remy champagne is the expression of a Grand Cru locality in Bouzy. Produced from a single plot, it is a blend of 50% Pinot Noir and 50% Chardonnay, vinified and aged in barrels on fine lees for a crystalline and precise style.
This cuvée is undosed, making it a Brut Nature. It is distinguished by its delicate bubbles, assertive minerality, and long finish. An ultra-limited series, only 1,060 bottles were produced.
The wine is vinified in barrels and aged on fine lees to refine the texture and preserve the energy of the fruit. The absence of dosage reveals the terroir and the purity of the chalk.
The Le Mont de Tauxière plot is located in Bouzy (Grand Cru), on the Montagne de Reims. The brown limestone soils rest directly on chalk, which regulates water and heat. This configuration results in a straightforward, salty profile with a distinct mineral tension and great length.
Vinification is carried out entirely in barrels, with long aging on fine lees to round out the structure without losing tension. Bottled in July 2020 and disgorged in January 2025, this cuvée is dosed at 0 g/L (Brut Nature).
A sunny vintage with assertive maturity, 2019 offers concentrated and balanced juices. In this wine, the richness of the vintage meets a limestone tension that stretches the palate and reinforces the sensation of purity.
Bright pale yellow. Fine, regular effervescence. Clear brilliance, limpid disc.
Citrus fruits, white flowers, toasted notes and wet stone. Elegant, precise and unostentatious.
Lively, salty attack. Satin texture, delicate bubbles. Chalky minerality, balance between tension and roundness, long, fresh finish.
Pair with pearly seafood, juicy poultry, lightly grilled seasonal vegetables, or seafood. The chalky texture, fine bubbles, and Brut Nature profile call for precise cooking, clean seasoning, and light sauces.
Store in a dark, stable cellar at 10–12°C, humidity ~70%. Store bottles horizontally. Avoid vibrations and temperature shocks. Allow to rest for 24–48 hours after transport before opening.
Optimal window: 2025–2038. 2025–2027: straightforward expression, lively citrus, lively bubbles, marked chalky texture. 2028–2032: creamier texture, appearance of fine brioche,fresh almonds, andorange peel without losing the salty traction. 2033–2038: elegant tertiary complexity (dried fruit, toasted breadcrumbs, hint of flint), persistent iodine finish, freshness intact thanks to the Brut Nature.
Serve at 10–12°C in tulip glasses. Do not decant. Open 10 minutes before serving to allow the foam to refine and the minerality to express itself.
