The Les Vaudayants cuvée is made exclusively from Pinot Noir, which brings a slender structure, precise red fruit and chalky tannins.
Grown on a plot in Bouzy (Grand Cru), the wine draws its character from chalky soils punctuated with clay, allowing for even ripening and favorable water retention in summer. This terroir, renowned for the power of its Pinots, gives the wine an aromatic depth and a mineral structure that lingers on the palate.
At the estate, the soils have been worked with horses and plows since 2012. The vineyard has been certified organic since 2018.
The harvest is vatted in 500-liter barrels where maceration takes place for about 15 days. This gentle immersion promotes the gradual extraction of anthocyanins and tannins, resulting in a silky texture. The wine is then aged for 17 months in barrels, the time necessary to polish the tannins, refine the texture, and integrate the subtle woody nuances without overpowering the fruit.
The year 2022 in Champagne was marked by a generally warm and sunny cycle, conducive to rapid and uniform ripening. In Bouzy, this dynamic produced an expressive Pinot Noir, with generous fruit but held together by a straightforward acidity. The thick skins and ripe seeds allowed for precise extraction, resulting in supple tannins from an early age and promising aging potential over five to eight years.
The color of the "Les Vaudayants 2022" cuvée is a deep ruby with garnet highlights, clear and bright. The tears are fine and regular, indicating a present but not heavy body, in a chiseled style.
On the nose, there is a bouquet of morello cherry and raspberry, enhanced by subtle spices (pink pepper),floral infusion (peony) and a hint of graphite/chalk. Aeration reveals a touch of stone fruit and dried leaves, the signature of ripe Pinot from Bouzy.
On the palate, this red wine is slender and tactile. The attack is crisp, evoking red fruit, the mid-palate unfurls a silky texture with fine, powdery tannins, and the finish stretches out with a salty, chalky relief that invites a second glass. Beautiful consistency between fruit, freshness, and sapidity.
Serve between 14 and 16°C in a Burgundy-style glass. Aerating for 20–30 minutes softens the texture and reveals the floral/graphite heart. Avoid vigorous decanting: the texture, which is already fine, benefits from opening slowly in the glass.
Store horizontally at 12°C, away from vibrations and light. Optimal window: 2027–2030 for juicy fruit; possible evolution until 2033 with more spicy, licorice, and slightly truffle notes, without losing the chalky finish.

Maceration for around 15 days in 500-liter barrels, followed by 17 months of barrel aging. This approach emphasizes a silky texture, precise fruit, and delicate integration of wood, without masking the chalky freshness of the terroir.
Aim for a cuisine of juices and textures: roasted poultry, tender pork, mushroom fricassees, roasted root vegetables. Avoid sweet or very spicy sauces; wine prefers finesse and umami to aggressive spices.
Delicious now after aeration, it will be at its best in 5 to 8 years. With time, the red fruit gains depth, the tannins soften and nuances of humus, sweet licorice, and truffle appear.
