Cuvée 30 ans de Biodynamie Fleury celebrates the start of the estate's conversion to organic and biodynamic viticulture in 1989.
It's a champagne that brings together all the unique characteristics of the Fleury house. It's a blend of 34% Pinot Blanc, 33% Pinot Noir and 33% Chardonnay, all vinified in oak barrels. Grapes from the 2000 and 2001 harvests. Once bottled, this cuvée spent 16 years in the company's cellars, to bring roundness and complexity, but also to prove that biodynamic champagnes can defy time.
In view of the purity and perfect balance of this cuvée, Jean-Sébastien Fleury decided not to dose it, making it a Brut Nature.
Cuvée 30 ans de Biodynamie Fleury has a golden, almost coppery color, with lovely reflections. Its bubbles are fine and delicate.
The nose reveals notes of ripe fruit, tarte Tatin and sweet spices. On the second nose, the aromatic palette broadens to reveal notes of butterscotch and honey.
On the palate, we discover a smooth, creamy champagne, with the aromatic notes discovered on the nose. The freshness of the finish is remarkable.
