This cuvée is totally atypical. The Grand Cru terroir of Aÿ is famous for its Pinots Noirs, yet it's here that I own a parcel, christened "Les Valnons Froid Cul", planted entirely with Chardonnays. From these white grapes planted on a terroir of black grapes, I wanted to make a cuvée apart. The result is an astonishing wine, combining the minerality of Chardonnay with the richness of the Aÿ terroir.
