Fabrice Pouillon's Les Terres Froides cuvée is a Blanc de Blancs champagne full of freshness and minerality, ideal for awakening the taste buds as an aperitif or with seafood.
It's an atypical Champagne, as it's made from 30-year-old Chardonnay planted on the Les Terres Froides parcel in Tauxières on the Montagne de Reims, a terroir where Pinot Noirs are more traditionally found. This parcel has very thin soil, with barely 30 cm of earth, and then arrives directly on the chalk. The result is late-ripening Chardonnays with lots of freshness.
Cuvée Les Terres Froides is aged in wood to round out these sharp, lively Chardonnays. The dosage is low (3g/l, Extra Brut) to underline the wine's lovely tension.
