Champagne Emeline De Sloovere'sN°5 Chardonnay Brut Nature is a confidential micro-cuvée, made from a single plot located in Monthelon, on the southern slopes of Épernay. Produced from just two barrels and aged for a long time, it offers a rare interpretation of Chardonnay.
With this cuvée, Emeline De Sloovere explores the most noble dimension of Chardonnay through prolonged aging. A rare cuvée with a precise, taut, and vibrant style.
The N°5 Chardonnay Brut Nature cuvée comes from the southern slopes of Épernay, at an altitude of between 120 and 350 meters. The clay-limestone soil, complemented by an old mass selection, gives the Chardonnay a natural tension, a straightforward minerality, and great aromatic complexity. The vines are cultivated according to the principles of regenerative viticulture: grass cover, natural composts, plant treatments—an approach that promotes soil vitality and fruit precision.
Vinification is minimalist. The juices ferment and age in five-wine barrels for 10 months, allowing the Chardonnay to express itself in a deep and delicate way. The cuvée then benefits from 46 months of aging on lees in the bottle, followed by a 6-month rest period after disgorging. Undosaged (Brut Nature), it reveals the absolute purity of the terroir and the aromatic subtlety of the grape variety. Sulfur is used very sparingly (< 35 mg/L).
Pale gold with brilliant highlights. Fine, regular effervescence, reflecting long aging on lees.
Refined and expressive: fresh fruit, white flowers, citrus, and delicate mineral notes. Aeration reveals a floral dimension and a chalky touch.
Straightforward, vibrant, and perfectly balanced. Silky texture, aromas of white fruit, flowers, and chalk. Long, elegant, and luminous finish.
A Blanc de Blancs of great purity, ideal for delicate cuisine that plays on finesse and freshness.
Store N°5 Chardonnay Brut Nature in a cool, dark cellar at 10–12°C, with stable humidity around 70%. Thanks to its long aging and pure style, this cuvée will evolve harmoniously for 8 to 12 years, developing notes of dried flowers, light honey, and dried fruit.
Aging potential: 8 to 12 years. In its early years, the cuvée reveals its lemony tension and distinct minerality. Between 4 and 8 years, it gains in fullness, revealing buttery and brioche nuances. At the end of its aging period, it reaches an elegant maturity, while retaining a mouthwatering texture.
We recommend serving this cuvée at 10–14°C in a tulip glass or a thin universal glass. Light aeration brings out the floral and mineral complexity of the Chardonnay.
