Description

Maison Elemart Robion's Cuvée 60/40 is a very delicate, subtle champagne to be enjoyed as an aperitif or with fine food.

This champagne is made from a blend of 60% Chardonnay and 40% Pinot Meunier. The grapes come from the Lhéry terroir in the Ardre Valley, and more precisely from plots on soils combining clay, limestone and sand. These plots all face south-west, giving the grapes excellent ripeness.

The grapes were then vinified in stainless steel vats and oak barrels. Malolactic fermentation was carried out and the wine was aged on lees before bottling in May 2019.

During the 36 months of cellar ageing, the bottles are handled regularly. This involves stirring the bottles to re-suspend the lees and thus develop the wine's texture and aromas.

Bottles of Cuvée 60/40 were disgorged in June 2022, and dosed at 4g/L Extra Brut.

This cuvée has a luminous, flowing pale yellow color, with deep, sustained yellow reflections in the glass.

The first nose reveals delicate notes of acacia flowers, strawberries and pineapple. Aeration adds nuances of hazelnut, white peach, fresh pear and fresh butter.

On the palate, a luscious, fruity texture is supported by orange acidity. The mid-palate is orchestrated by chalky minerality and iodized salinity.

Serve Maison Elemart Robion's Cuvée 60/40 in a slender, shapely glass, with salmon tataki, sea bass fillet browned in virgin olive oil, or fresh, melting goat's cheese crottin.
