      Perpétuité | Bottle 75cl

This Perpétuité wine from the Champagne hillsides has been vinified as a perpetual reserve (adding the wine of the year to a barrel filled with previous vintages). The name Perpétuité refers to the endless winemaking process and also echoes the history of Clairvaux Abbey, which was converted into a prison during Napoleon's reign and whose outbuildings are now the cellars of the Drappier house.

      Description

This Perpétuité wine from the Champagne hillsides has been vinified as a perpetual reserve (adding the wine of the year to a barrel filled with previous vintages). The name Perpétuité refers to the endless winemaking process and also echoes the history of Clairvaux Abbey, which was converted into a prison during Napoleon's reign and whose outbuildings are now the cellars of the Drappier house.

This Champagne hillside is composed exclusively of Pinot Noir from Urville, a terroir in the Côte des Bars in the Aube region.

The clear wines are stored in 5,000-liter casks. The Drappier house's perpetual reserve consists of five casks, which will be filled forever with each vintage deemed appropriate for it. Tronçais oak was selected for its slow growth cycle. The wood has a very tight grain, which allows it to preserve the wine for decades. This method gives the wine a beautiful density and texture, while aging softens its acidity.

This Perpétuité cuvée has a bright golden color.

The nose reveals floral notes reminiscent of white Burgundy.

The first taste is fresh and lively, then develops into a rich roundness. The finish is focused on a gentle bitterness and carried by a lovely minerality.
