Brut Nature Rosé Les Riceys is made from Pinot Noir grapes grown in the limestone soils of the commune of Les Riceys, a village in the Aube region renowned for its rosé wines. This unique terroir, facing south on the slopes of the Kimmeridgian hills, gives the wine a pronounced minerality and intense aromas.
The winemaking method for this champagne is based on carbonic maceration of whole bunches for 48 hours, allowing for optimal extraction of the Pinot Noir's color and aromas. Twenty percent of the wines come from a perpetual reserve of rosé, adding extra complexity to the cuvée. After six months of aging in stainless steel vats and oak casks, the wine is bottled and then stored in the Drappier cellars for 30 months. This cuvée is not dosed in order to preserve its aromatic purity.
Brut Nature Rosé Les Riceys is distinguished by a deep, bright pink color, reflecting the richness of Pinot Noir.
The nose is intense, dominated by aromas of candied morello cherry and violet syrup, accompanied by a floral touch of lavender.
