La Grande Sendrée 2012 is the result of a meticulous blend of 55% Pinot Noir and 45% Chardonnay. The grapes come from the eponymous plot located on Kimmeridgian chalky soil. It bears this name because it was covered in ash after the Urville fire in 1836. Vinification is carried out partly in oak barrels (35%) and partly in stainless steel vats (65%). Malolactic fermentation brings roundness and complexity.
Bottle aging lasts nine years, with manual riddling, resulting in exceptional maturation. The dosage, set at 4.5 g/L, uses a liqueur aged for 15 years in wood, ensuring a subtle balance between freshness and vinosity.
The 2012 vintage is consideredone of the finest of this century in Champagne. A harsh winter, with temperatures reaching -20°C, was followed by a hot summer, ideal for ripening the grapes. However, a historic hailstorm reduced the harvest, making this cuvée particularly rare. The grapes that were spared were of exceptional quality, offering remarkable balance between alcohol and acidity. The harvest, which took place between September 15 and 25, produced a wine that is both light and salty, expressing all the richness of its unique terroir.
La Grande Sendrée 2012 has a bright golden color, enhanced by luminous highlights and a fine, persistent effervescence.
On the nose, this cuvée reveals intense aromas of Napoleon cherries, accompanied by floral notes of white flowers and delicate hints of vanilla.
On the palate, the attack is complex and tense. Flavors of red fruit and vanilla mingle with the minerality typical of Kimmeridgian soil, leading to a subtly spicy, long finish.
