The production of Drappier's Blanc de Blancs champagne
Blanc de Blancs Drappier is made from 95% Chardonnay and 5% Blanc Vrai, an ancient Champagne grape variety that adds a delicious note to this cuvée. Grown on the Jurassic Kimmeridgian limestone terroir of Urville, this Chardonnay captures the mineral essence of the soil, which is reminiscent of a grand cru from Chablis, located not far away. The sustainable, reasoned cultivation practices on the estate reinforce this approach of purity and respect for the terroir.
Vinification takes place in stainless steel vats to highlight the minerality of the Chardonnay. A small proportion (5%) of the wines are aged in large oak casks, which adds a touch of complexity and roundness without overpowering the mineral character of the Chardonnay. The cuvée is unfiltered and contains few sulfites in order to preserve the aromatic purity of the grape variety. This Blanc de Blancs is then bottled and placed in the cellars of the house, where it will spend 30 months to gain finesse and complexity. The dosage is 6.5 g/l, providing a perfect balance between liveliness and elegance.
