The Révolution cuvée by Doyard is an undosed Blanc de Blancs champagne. It is an ambitious cuvée, for which Guillaume Doyard uses grapes from the estate's Grand Cru plots, grapes with great maturity, which contribute to making this cuvée, with no added sugar, a full-bodied and generous champagne.
Half vinified in oak barrels and half in stainless steel vats, the Révolution cuvée retains great freshness thanks to the absence of dosage, but also because Guillaume Doyard has chosen to carry out only partial (20%) malolactic fermentation.
Révolution is a tense and straightforward champagne, but one that opens up after a few moments to reveal expressive and delicious aromas.
This cuvée is perfect with lobster, oysters, or smoked fish.
