The production of the 2014 Fleur de Passion champagne from Diebolt-Vallois
The Fleur de Passion 2014 cuvée is a tribute to the exceptional terroir of Cramant, located on the prestigious Côte des Blancs. This Grand Cru terroir has soil where chalk is close to the surface. A thin layer of soil covers the chalk, making it the perfect environment for Chardonnay. Old vines, around 60 years old, are used to produce this cuvée. The east-southeast exposure of the eight selected plots enhances the ripening of the grapes.
The year 2014 was marked by contrasting weather conditions: a mild winter and early flowering, followed by a rather cool and rainy summer. This alternation of weather conditions resulted in grapes with great freshness and an excellent balance between ripeness and acidity.
The Fleur de Passion 2014 cuvée is vinified in oak barrels, allowing the wine to develop its complexity while retaining its aromatic purity. This champagne does not undergo malolactic fermentation in order to preserve all its freshness and aging potential. The dosage is minimal, classifying this cuvée as Extra Brut, for a pure and faithful expression of the terroir.
