A true tribute to traditional methods, this Blanc de Blancs is vinified entirely in oak and without malolactic fermentation. The result is a wine of rare intensity, combining the power of Cramant Chardonnay with a vibrant mineral tension, sculpted by haute couture aging.
This cuvée breaks with modern technology to return to artisanal winemaking, aiming to bring out the terroir’s original energy.
The Cramant terroir, the jewel of the Côte des Blancs, is characterized by exposed chalk and ideal sun exposure. It gives Fleur de Passion a unique creamy texture, mineral depth, and the ethereal elegance characteristic of the world’s greatest Chardonnays.
The year 2015 was a sunny vintage, marked by a hot, dry summer that allowed the grapes to reach perfect phenolic ripeness. In such conditions, the decision not to undergo malolactic fermentation proves masterful: it preserves a backbone of freshness against the natural richness of the vintage. This 2015 offers a dense, generous body, yet carried by a vibrant tension that ensures supreme balance.
The color is a crystalline pale gold, illuminated by subtle green highlights. The effervescence is of great finesse, lively and persistent.
The nose is an explosion of complexity. It opens with notesof fresh citrus, white flowers, and chalk. Upon aeration, nuances of fresh butter, toasted hazelnut, and a touch of exotic fruit emerge, a legacy of the sunny vintage.
The attack is crisp and pure. The palate unfolds with a creamy, full-bodied texture, carried by silky bubbles. The finish is masterful, marked by intense saline minerality and remarkable aromatic persistence.
