Fleur de Passion is the emblematic cuvée of the Diebolt-Vallois house, produced in limited quantities during the finest years. It is designed as a work of oenological artistry, with meticulous attention paid to each stage of production.

The grapes come exclusively from the village of Cramant, the jewel of the Côte des Blancs. The soil is composed of pure Campanian chalk, rich in calcium, giving the wine a chalky and saline minerality. The vines, over 40 years old and deeply rooted, produce concentrated and complex juices. The altitude and south-east exposure of the plots allow the wine to retain a lively natural acidity, guaranteeing excellent aging potential.
Fleur de Passion 2008 is vinified entirely in small oak barrels, without malolactic fermentation. This technical choice preservesthe lively acidity and magnifies the aromatic precision of the Chardonnay. Each barrel is monitored individually, in keeping with traditional methods. The wine is then aged on fine lees for nearly 10 months before bottling.
After the second fermentation, the champagne rests on slats for nearly 13 years before disgorging, which will take place in April 2022. The dosage is Extra-Brut, less than 5 g/l, to allow the wine's structure to fully express itself. The magnum format guarantees a slower, finer, and more harmonious evolution, with a very delicate bubble.
2008 is recognized as one of the great Champagne vintages ofthe 21st century. After a cool summer, the sunny end of the season allowed the grapes to ripen slowly and evenly. The Chardonnays harvested in Cramant in 2008 had a perfect balance between acidity and maturity. They produce wines that are straightforward, vibrant, and incredibly persistent. This is a vintage made for aging, which is now beginning to reveal its full complexity.
The color of the "Fleur de Passion 2008" cuvée is a bright, light gold with silvery highlights. The effervescence is extremely fine and regular, characteristic of prolonged aging in magnums.
The nose reveals an aromatic palette of rare complexity. It opens with notes of candied lemon, damp chalk, and white flowers. With aeration, hints of fine brioche, hazelnut, orange zest, and a subtle hint of iodine appear, characteristic of the chalky terroir.
On the palate, this champagne displays a chiseled, taut, perfectly balanced texture. The aromas of white fruits and candied citrus are supported by a chalky minerality and lively acidity. The finish is salty, persistent, and incredibly precise. The wine evolves superbly in the glass, gaining in fullness and intensity with each sip.
This bare magnum of Fleur de Passion 2008 should be stored in a stable environment, between 10 and 12°C, away from light and vibrations. The bottle should be laid down so that the cork remains moist, ensuring a perfect seal over the long term.
Thanks to its exceptional vintage, barrel aging, long aging on lees, and magnum format, this cuvée has an aging potential of over 20 years. It can be enjoyed today or left in the cellar to reveal more evolved and mature aromas.
This champagne is best served at a temperature of 40 to 50°F, in a tulip glass or a large white wine glass. Decanting is not necessary, but opening the bottle 15 to 20 minutes before tasting allows the aromas to fully develop.
The Fleur de Passion cuvée takes its name from a poetic tribute to the flower of the same name, a symbol of finesse and rarity. It was created by Jacques Diebolt to represent the pinnacle of the family's expertise. The 2008 vintage, one of the greatest of the decade, has established itself as an exceptional vintage, particularly successful in this magnum format, which highlights the ambition and elegance of this iconic cuvée.
This is a Champagne for enthusiasts. And this 2008 vintage is without doubt one of the finest.
Where the grapes come from makes all the difference. At Cramant, our vines are between 45 and 60 years old and are located on the finest slopes. The wine is aged in small 225-liter barrels. I produce around 10,000 bottles a year.
It's a cuvée born of experimentation: in 1993, I had fun putting the wines from the best plots into the few barrels I was using to make the Prestige (which is blended with wines also aged in foudre). I made 9 barrels just to see. And the tasting was so conclusive that I decided to make a cuvée in its own right: La Fleur de Passion.
It's a very special champagne, lively, with long ageing potential, astonishing complexity and rare power. It is one of today's finest cuvées. Made only in good years, it was not produced in 2001, 2003 and 2009.
