Cuvée Fleur de Passion is Diebolt-Vallois' flagship cuvee. A vintage cuvée, it is only produced in exceptional years.
It is a Blanc de Blancs champagne, made exclusively from vines grown on the Cramant terroir, classified as a Grand Cru. The grapes come from 7 to 8 parcels of old Coteaux vines, located in particular at Les Buzons.
Many of the vines are 60 years old or more, making for low yields, but imparting unique aromas to the grapes. These vines are planted on soils consisting of a fine layer of earth on a chalk base, which is reflected in the mineral touches of the Fleur de Passion cuvée.
This champagne is vinified in small, old-fashioned Burgundy barrels, using techniques designed to avoid fatiguing the wine and preserve the full expression of the terroir.
