The Cuvée Prestige from Diebolt-Vallois is a Blanc de Blancs champagne made from grapes grown on Grand Cru vineyards in Cramant, Chouilly, Mesnil sur Oger, and Oger. Some of the grapes come from the Les Pimonts vineyard in Cramant, where the soil consists of a thin layer of earth on a chalk base, with a general east-southeast exposure.
The Cuvée Prestige is the result of a blend of wines from the last harvest and a perpetual reserve started in 2009. These wines bring roundness, richness and complexity to the Cuvée Prestige Diebolt-Vallois.
The Prestige cuvée is the one that requires the most work. It is a blend of three vintages, 50% of which has been aged in casks and 50% in vats.
As is often the case with Grand Cru wines, it is all about blending and balance.
I blend three grands crus from the Côte des Blancs: Cramant, Chouilly, and Le Mesnil/Oger. This blend includes at least three vintages, the proportions of which can vary to achieve the balance, finesse, and elegance we are looking for.

By Patrick BorrasThe Prestige Diebolt-Vallois cuvée has a yellow color with golden highlights. Its bubbles are fine and discreet, delicately sparkling in this beautiful color.
This champagne offers a rich and complex nose, with floral aromas focused on white flowers such as lime blossom and hawthorn. On the second nose, aromas of white fruits such as white peach enrich the olfactory palette.
The Prestige Diebolt-Vallois cuvée offers a rich and silky palate with beautiful balance. On the palate, slightly honeyed floral aromas dominate, carried by a beautiful minerality. The Prestige cuvée offers a beautiful expression of Chardonnay, dense, refined, and elegant.
I recommend serving this champagne at a temperature of 10°C to allow its aromas to develop fully. The Prestige Diebolt-Vallois cuvée is one of my favorite champagnes.
