It is made from:
- 80% Pinot Noir: power, structure, and aromatic intensity of red fruits.
- 20% Chardonnay: freshness, tension, and floral elegance.
The terroir
The grapes come exclusively from carefully selected Premiers and Grands Crus:
- Aÿ and Mareuil-sur-Aÿ: produce powerful and intense Pinot Noir grapes.
- Ambonnay, Bouzy, Verzy, Verzenay: provide full-bodied, deep and colorful Pinot Noir grapes.
- Mailly and Cumières: add finesse and airy fruitiness.
- Avize and Ambonnay: offer delicate, balanced Chardonnays with floral notes.
Vinification
The cuvée was drawn on June 17, 2020, and aged for at least five years in the Deutz cellars. Malolactic fermentation was carried out, softening the texture and revealing a delicious roundness. The dosage, at 6.5 g/L, makes this a Brut that combines freshness and intensity. This long aging brings complexity and depth without altering the brightness of the fruit.
