Cuvée Rosé 2007 Œil de Perdrix from Maison Dehours is a champagne that combines purity and minerality.
A blend of 45% barrel-aged Chardonnay Vieille Vignes and 55% Meunier from the Marne Valley, it is a blended rosé champagne, with the addition of red wine only affecting the color of the cuvée. The aromas are obtained by pellicular maceration as soon as the grapes are pressed.
This cuvée is aged on lees, in stainless steel vats and barrels.
Rosé 2007 Dehours has a pale, partridge-eye color.
The dosage is Extra Brut, of the order of 2g/l to let the sensation of purity blossom.
Only 3580 bottles of this highly confidential cuvée have been produced.
