The Blanc de Blancs from Brice is a remarkable champagne for its finesse and delicacy. It is a perfect cuvée for an aperitif with its fruity and floral notes.
This is an atypical Blanc de Blancs. Half of the Chardonnays in the blend come from the Grand Cru terroirs of Bouzy, on the Montagne de Reims, the Brice family's stronghold. The Chardonnays from Bouzy offer beautiful minerality, brought by the limestone soil, and a fairly pronounced aromatic richness. The other half of the blend comes from the Premier Cru terroir of Grauves, on the Côte des Blancs. The village of Grauves is located at the far end of the Côte des Blancs, producing Chardonnays that are rounder and fruitier than the classic, taut Chardonnays of the Côte des Blancs.
The Blanc de Blancs from Maison Brice was created by the cellar master, Christophe Constant. Most of the juice was vinified and aged in stainless steel vats. The rest was transferred to 350-liter barrels, adding a touch of complexity to the blend.
To achieve the perfect balance between the different Chardonnays, Christophe Constant chose not to carry out malolactic fermentation, allowing the wine to retain all its mineral tension.
The dosage is Extra Brut (3g/l), simply highlighting the aromaticity of the Chardonnays.
This Brice Blanc de Blancs has a beautiful golden color with silvery highlights. Its bubbles are remarkably fine.
On the nose, this is a generous and expressive champagne, initially offering notes of white flowers, followed after a few moments by notes of white fruit (pear) and a touch of citrus.
On the palate, this cuvée opens with a round attack and a silky texture. The fruity notes discovered on the nose return in the mid-palate, along with a certain complexity. The finish lingers on the palate for several seconds.
A superb cuvée that can be enjoyed as an aperitif to stimulate the taste buds or paired with a variety of dishes, particularly seafood (seafood, white fish, ceviche, etc.).
