This Seconde Nature cuvée, produced by Bonnet-Ponson, is a successful balance between freshness and aromatic richness.
This champagne is a blend of 45% Pinot Noir, 40% Chardonnay and 15% Meunier, made with the heart of the cuvée. The grapes come from the "Les Vigneules," "Les Spectres" and "Les Caquerets" vineyards in the Premier Cru commune of Montagne de Reims. These vines, which are around thirty years old, benefit from a south-eastern exposure and are planted on clay-limestone soil with a sandy subsoil rich in fossilized shells.
This cuvée is vinified without sulfites, fining, or filtration, in 228- to 400-liter barrels. Malolactic fermentation is carried out and aging on fine lees takes place over nine months. This champagne is unblended to preserve the characteristics of the wine.
On the nose, this champagne expresses beautiful floral notes, followed by hints of spices, citrus and exotic fruits.
The attack is lively and evolves towards a frank and pure mid-palate. On the palate, the structure is vertical and refreshing, lemony notes accompany the vinosity and fruitiness of the Pinots. The finish lingers on a mouth-watering, chiseled mineral texture.
This mineral and fresh Seconde Nature cuvée will pair beautifully with the iodine flavors of seafood.
