This perpetual Non Dosé cuvée, produced by Bonnet-Ponson, is characterized by its beautiful balance between roundness and liveliness and its aromatic complexity.
This cuvée is blended from 35% Pinot Noir, 30% Chardonnay and 35% Meunier, grown in Chamery, Vrigny and Coulommes la Montagne, terroirs classified as Premier Cru in the Montagne de Reims. This wine draws its aromatic richness from the different types of soil (clay-limestone, sandy and loamy) on which the vines were planted 35 years ago.
This champagne is vinified in stainless steel vats (85%) and oak barrels (15%), aged on fine lees for 8 months and undosed to preserve the identity and character of the wine.
This cuvée exudes notes of apple, pear, white peach, and citrus, followed by tertiary aromas of brioche and toast.
The character of this perpetual Non Dosé cuvée, its beautiful aromatic complexity and its presence on the palate allow it to be paired with many dishes, such as oily fish and white meats.
