This Le Jour cuvée, produced by Bonnet-Ponson, is a Blanc de Noirs vinified entirely without sulfites, fining, or filtration.
This single-vineyard, single-varietal champagne is made exclusively from Pinot Meunier grapes grown on the "Le Jour" plot in the Vrigny terroir, a Premier Cru vineyard in the Montagne de Reims. The vines, planted in 1971, grow in clay-loam soil with a limestone subsoil, giving the Meunier a beautiful roundness.
This cuvée is vinified in 228- to 400-liter barrels using indigenous yeasts. Malolactic fermentation is carried out and aging on fine lees lasts for nine months. This champagne is unblended to preserve the unique characteristics of the terroir and grape variety.
This champagne is fruity and spicy, with a full, rich and mineral palate and a long, salty finish.
This Le Jour cuvée is the perfect accompaniment to white meats and mild cheeses.
