La Grande Année 2007 is an extremely fine champagne with a pronounced aromatic amplitude. Thanks to its multiple facets, it offers an impressive variety of pairings, from starters to cheeses.
Made from 70% Pinots Noirs from Aÿ and Verzenay and 30% Chardonnays from Cramant and Oger, La Grande Année 2007 is 91% classified Grands Crus and 9% classified Premiers Crus. One of Bollinger's special features is that the entire wine is fermented in barrels, for twice as long as the appellation standards. The wine is then aged in small old oak barrels. The result is a cuvée of such complexity and delicacy. Its dosage of 7 grams of sugar per liter gives it purity and finesse. On the nose, La Grande Année 2007 reveals fragrances of fresh almond, juicy fruit such as peach, followed by roasted notes and dried citrus. On the palate, the wine's rich, complex aromas and vinosity are immediately apparent. With honeyed touches of preserved lemon, this fresh cuvée surprises with its chalky texture and delicate bitters. This magnificent champagne is the perfect accompaniment to noble dishes such as foie gras (fresh or pan-fried), hommard, fish in sauce or grilled, roast lamb, or cheese such as Parmesan or 36-month Comté.
