The Nicolas François Billecart cuvée is a tribute to the founder of the House. Created in 1694, it embodies more than any other cuvée the expertise and inimitable style of the Billecart-Salmon House.
This champagne brings together the two most prestigious terroirs in Champagne: the Côte des Blancs (for Chardonnays) and the Montagne de Reims (for Pinot Noirs), with a selection of only Grands Crus and Premiers Crus.
This cuvée is partially vinified in oak barrels to bring a touch of depth and aromatic complexity. The bottles have been aged in the cellar for 10 years.
This champagne has a beautiful, bright golden yellow color with precise effervescence.
The nose is rich and subtle with a complex and refreshing aromatic curve. It reveals intense notes of orchard fruits, stone fruits and nuts (slightly roasted flaked almonds, frangipane, candied mandarin zest) and acacia flowers and rose petals.
On the palate, the wine's maturity comes through with fresh yellow raspberry, fresh quince, honey biscuits, lemon caviar, fresh fig, licorice, and pigeon cherry. Its incredible power is controlled by its perfectly integrated dosage. The finish is of rare complexity, evolving towards notes of toast and bergamot.
This Nicolas François Billecart 2008 cuvée is the ideal accompaniment to a beautiful lemon-flavored sole or a delicious milk-fed veal chop with chanterelle mushrooms.
