The Le Sous Bois cuvée from Billecart-Salmon champagne is aged in oak barrels, a cuvée with character that will accompany a meal from cocktails to cheese.
This cuvée blends the three iconic grape varieties of Champagne: 43% Chardonnay from the Grands Crus of the Côte des Blancs, 28% Pinot Noir from the Premiers and Grands Crus of the Montagne de Reims, Aÿ, and Mareuil-sur-Aÿ, and 29% Meunier harvested in the Vallée de la Marne. Vinified entirely in old oak barrels, it perpetuates ancestral expertise. Once bottled, this cuvée benefits from five years of maturation on lees. This long aging allows the wine to develop great aromatic complexity and a silky texture. The Extra Brut dosage highlights the purity and balance of this cuvée.
The Le Sous Bois cuvée is based on a base year, enriched by a collection of reserve wines dating back to 2006. This blend of several vintages gives this cuvée remarkable depth.
Le Sous Bois has a crystal-clear, intense golden yellow color. Its bubbles are fine and regular.
The nose reveals a wealth of aromas: pastry, citrus, and orchard fruits. These notes evolve into hints of mocha and bergamot. Impressive intensity on the nose.
On the palate, this cuvée reveals a silky, elegant texture. Subtle flavors of milk bread, melted butter, and sweet spices mingle with a vibrant freshness. The long, refined finish is enriched with toasted and grilled aromas.
The price of a bottle of Le Sous Bois champagne from Billecart-Salmon is 77,95 €. This champagne benefits from the exceptional quality of the selected grapes, the meticulous expertise of wood-aged vinification, and five years of aging in the cellar.
