      It's hard to imagine a better name! Brut Sous Bois from Billecart-Salmon is a cuvée aged in oak barrels, a cuvée with character that will accompany a meal from cocktails to cheese.

      Brut Sous Bois, presented here in a magnum, is a champagne made from the three main grape varieties of Champagne: Pinot Noir, Pinot Meunier, and Chardonnay. Vinified entirely in oak barrels, this cuvée displays great character and expressiveness.

      Its temperament is first apparent in its deep, rich golden color. It is bright and dotted with fine, regular bubbles.

      The nose reveals an intense, concentrated and rich cuvée. This champagne evokes dried fruits, citrus fruits and white fruits. After a few moments, rounder and more complex notes appear, inherited from the barrel ageing, with a slight touch of vanilla.

      On the palate, Brut Sous Bois Billecart-Salmon offers a very elegant texture that is silky and smooth. Sensations of freshness and power mingle with great elegance on the palate. There are slightly toasted notes, characteristic of great champagnes aged in wood.

      The finish of this Brut Sous Bois lingers for several seconds on notes combining sweet spices and toasted aromas. Superb!

      A very fine cuvée, tailor-made for fine dining, although connoisseurs will appreciate it on its own as an aperitif.
