The AyalaCollection No. 16 champagne sublimates the art of the Great Whites of Champagne. Complex and finely crafted, it combines the finesse of Chardonnay with rare grape varieties to offer a unique tasting experience.
The production of Ayala's Collection No. 16 champagne
Collection No. 16 is an exceptional champagne made from 50% Chardonnay and 50% forgotten grape varieties: Arbane, Petit Meslier, and Pinot Blanc. These rare grape varieties reflect Ayala's desire to revive a unique heritage. The grapes come exclusively from Grands and Premiers Crus vineyards, carefully selected in the Côte des Blancs and Montagne de Reims regions: Aÿ, Avenay, Chouilly, Cramant, Cuis and Oger.
The 2016 vintage was a year of contrasting weather conditions. After a cool, rainy spring, the summer heat allowed the grapes to ripen perfectly. These conditions produced wines with great aromatic richness and remarkable aging potential. Aged for six years in the Ayala cellars, Collection No. 16 reveals exceptional aromatic complexity. With a precise dosage of 5.4 g/L, this cuvée expresses the purity typical of the Ayala style.
