Ayala's Blanc de Blancs 2012 is a fresh, lively champagne that's perfect for an aperitif.
It's a cuvée made exclusively from Chardonnay from the Grands Cru terroirs of Mesnil-sur-Oger, Chouilly and Cramant. Three villages on the famous Côte des Blancs.
This Blanc de Blancs 2012 Ayala favors purity, vinified then aged in vats before gaining in complexity for 6 years in the house cellars.
The dosage is on the borderline between brut and extra brut (6g/l) to let the wine's purity shine through.
This is a champagne with a pale gold color and fine, abundant bubbles.
On the nose, this Blanc de Blancs 2012 reveals delicate aromas of citrus, white fruit and frangipani.
On the palate, this is a champagne with a lively attack, then revealing a silky, taut mouthfeel. There are lovely notes of lemon, a floral touch, all carried by a beautiful minerality.
A superb aperitif champagne that could also be enjoyed with scallops or white-fleshed fish.
