The cuvee Brut Nature from Ayala is a champagne which, unlike most others, receives absolutely no liqueur. It is tense, finely honed and extremely elegant with an agreeable touch of fruit.
Ayala Brut Nature is bright and limpid in aspect with flashes of gold. Discreetly fruity notes mingle with elegant floral aromas on the nose intermingled with hints of citrus. The lively attack is accompanied by a fine and abundant effervescence, with the palate developing fruit and mineral notes and more complex aromas of freshly cut corn.
Perfect with lobster, sushi, crayfish and caviar, it also marries successfully with soft creamy and rind cheeses such as Camembert or Brie and can agreeably accompany a cigar at the end of an evening.
The grapes are grown on classified champagne terroirs – Grand Cru and Premier Cru, and this cuvee, as with the Brut Majeur and the Brut Nature, is a blend of 45% Pinot Noir, 30% Chardonnay and 25% Pinot Meunier completed with 20% of reserve wine.
