For its 170th anniversary, Maison Besserat de Bellefon gave its cellar master, Cédric Thibault, free rein to create an exceptional cuvée that expresses the best of his style. Perfect for special occasions, this extraordinary champagne pairs beautifully with lobster or haddock.
Made from Grands Crus (Oger, Chouilly, Cramant, Ambonnay, Mailly) and Premiers Crus (Cumières, Mareuil sur Ay), this cuvée is the result of a rigorous selection process. The three grape varieties, Chardonnay (45%), Pinot Noir (45%) and Pinot Meunier (10%), are vinified using a unique process, specific to the House and steeped in 80 years of history.
By choosing to reduce the quantity of liqueur de tirage (the liqueur that allows the second fermentation), the size of the bubbles is reduced by 30%. The lighter mousse gives its champagnes a very pleasant creamy and smooth character. This smoothness is complemented by the House's characteristic freshness. The absence of malolactic fermentation allows a certain acidity and brightness to be maintained on the palate.
B de B is unique in that it undergoes partial oak barrel vinification, which gives it a subtle density.
For its anniversary cuvée, the House has reaffirmed its symbols through its traditional 18th-century bottle shape and family coat of arms.
The color is pale gold with slight amber highlights and beautiful intensity. The mousse is fine and creamy with delicate strands of bubbles.
The first nose is dominated by subtle aromas of melted wood, giving way to more fruity notes of candied citrus and orange zest.
The palate is elegant and powerful, offering a delicious blend of toasted and fruity fragrances. Very fresh, the finish reveals spicy aromas with a hint of bitterness.
Tasting
By Patrick BorrasThe B cuvée has a golden color with golden highlights. Its bubbles are fine and delicate, with beautiful intensity.
It has a very floral, pleasant nose with slightly honeyed notes of white flowers (lime blossom, broom) and a few spicier, slightly peppery notes that add charm and character.
The attack on the palate is clean, smooth and round, punctuated by fresh, delicate notes brought by citrus aromas (lemon, grapefruit zest) with a lovely bitterness that gives it good length on the finish.
I recommend serving this champagne as an aperitif at a temperature of 8°C.
