Located on the heights of Villers-Allerand, classified as Premier Cru, the Les Auges plot covers 1.2 hectares. Planted in 1973 and 2010, it rests on rich clay-limestone soils, perfectly suited to Pinot Noir. The terroir is distinguished by its ability to restore the freshness of the limestone subsoil while giving the wine density.
The vineyard is certified organic and is cultivated with respect for living organisms. The Maillart estate applies advanced agroecological practices to allow the terroir to express itself with sincerity.
The 2020 harvest is vinified entirely in wood, without malolactic fermentation. This method preserves the wine's natural tension while giving it a beautiful aromatic complexity. The wine is unadulterated (Brut Nature – 0 g/l), allowing the finesse of the terroir to express itself without artifice.
In Champagne, 2020 was marked by favorable weather conditions: a warm spring, a dry summer, and an early harvest under sunny skies. In Villers-Allerand, this allowed the grapes to reach perfect ripeness, resulting in dense, well-balanced wines. The decision not to carry out malolactic fermentation and to age in wood magnifies the taut and precise profile of this sunny vintage.
