This rosé cuvée, blended from Premier Cru wines from Rilly-la-Montagne, embodies the Vilmart signature: integrated reserve wines, no malolactic fermentation, and aging in wood for complexity. It combines aromatic purity, volume, and bright fruit with a clean finish that calls for the table.
Its aromatic profile features the red fruits of Pinot Noir, a touchof sweet spices, nuances of pastry linked to the aging process, and a refreshing citrus undertone.
The Rubis cuvée is a rosé blend dominated by Pinot Noir. It is made with the addition of Pinot Noir red wine, which brings color and structure. The wines come from vines that are around 35 years old.
This blend aims forbalance between fruit, tension, and texture, with a dosage designed to be a discreet binding agent (8 g/l).
The grapes come from Rilly-la-Montagne, a Premier Cru village nestled against the Montagne de Reims. The soils there are a mixture of chalk, sand, and silt, producing a Pinot Noir with beautiful vinosity and a Chardonnay with great saline integrity. The altitude and temperate exposures preserve freshness and refine ripeness, key factors for a chiseled and expressive rosé.
The wines were vinified and aged on fine lees for 10 months in oak casks, without malolactic fermentation, in order to preserve their tension and aromatic definition. The 2022 base was blended with 2020/2021 reserve wines for complexity. Bottled, then aged on racks in chalk cellars until disgorging in July 2024. Dosage: 8 g/l (Brut).
Rubis is based on a 2022 base, a sunny year that produced generous, ripe fruit. The addition of 2020/2021 reserve wines enriches the palette: the older wines bring roundness, patina, and stylistic consistency, while the 2022 base providesenergy and fruitintensity. This multi-vintage approach goes beyond the expression of a single harvest and guarantees consistency over time.
The color of the Rubis cuvée from Vilmart champagne is a bright pink with raspberry highlights, crossed by a fine and regular effervescence.
On the nose, there are red fruits (strawberry, redcurrant), a touchof citrus, sweet spices, and hints of pastry linked to the aging in large oak barrels.
On the palate, this champagne is creamy and mouthwatering, combining juicy fruit and citrus tension. The long, fresh finish leaves a sensationof balance and purity.
Store your bottles ina dark place at a stable temperature of 40–54°F (10–12°C) and ~70% humidity. Keep them lying down and away from vibrations to preservethe effervescence and prevent premature oxidation. These conditions prolong freshness and aromatic precision.
Right now, the wine charms with its crisp red fruit and brightness. From 2026 to 2028, it gains roundness and pastry notes. From 2029 onwards, notes of dried fruit, light honey, and creamier bubbles appear. Optimal window: 2025–2030, depending on your taste.
Serve between 9 and 11°C in a tulip glass to bring out both the delicious fruitiness and the tension of the wine. Avoid decanting. Opening the bottle 10 minutes before serving is enough to smooth the attack and harmonize the whole.
At Vilmart,aging in large oak barrels is more of a philosophy than a technique. It structures the wine without leaving its mark, allowing the Pinot Noir to speak for itself and the Chardonnay to lengthen the finish. Rubis is a perfect example of this: a rosé where the wood enhances the purity, never the other way around.
