This 2011 Blanc de Blancs cuvée, made from sixty-year-old vines grown on chalky soil, has a highly developed minerality.
This Blanc de Blancs is made from Premier Cru Chardonnay grapes grown on a single plot in Rilly-la-Montagne called "Les Blanches Voies." In accordance with its Sustainable Viticulture (VDC) and High Environmental Value (HVE) certifications, Maison Vilmart cultivates its vines with the utmost respect for the terroir.
The wines are then vinified and aged in 228-liter oak barrels. This aging process allows the wood to coat the wines and tame the exuberance of the Rilly-la-Montagne grapes. Malolactic fermentation is not carried out in order to preserve a beautiful freshness. After bottling, the wine is aged in cellars for 84 months.
This cuvée has a straw yellow color with slight pale green highlights and is fueled by a very delicate effervescence that promises fullness and finesse.
The nose is harmonious with a bouquet of lemon, lime and grapefruit. Subtle notes of vanilla and toasted hazelnuts provide structure and consistency to the wine.
The palate expresses notes of dried fruit, always underscored by vanilla and hazelnut. After a few moments, aromas of apricot, ripe pear, and honeysuckle round out this highly complex wine. A delicate, silky texture on the palate reflects the personality of this finely crafted wine.
This 2011 Blanc de Blancs champagne can be enjoyed as an aperitif or paired with scallops, sweetbreads, or seafood such as oysters and caviar.
