The Grand Cellier cuvée from the Vilmart house is a champagne that successfully combines great finesse with delicious notes. A champagne of great class.
Laurent Champs, representing the fourth generation, crafts this cuvée by blending 70% Chardonnay and 30% Pinot Noir. The grapes are sourced exclusively from the Premier Cru terroir of Rilly-la-Montagne.
The wines are then vinified and aged in oak casks for 10 months. This aging process allows the wood to soften the wines and tame the fiery character of the Rilly-la-Montagne grapes. Malolactic fermentation is not carried out in order to preserve a beautiful freshness.
The Grand Cellier cuvée has a bright color illuminated by countless bubbles.
On the nose, this champagne initially reveals milky notes, hints of blond caramel and tobacco. After a few minutes, the barrel aging comes through with more racy notes. There is a lovely fruitiness that is still fresh and delicate.
On the palate, the wine starts with a tense and elegant attack. The mid-palate is creamy, with a lovely hint of vinosity. It is structured and harmonious, ending with a mineral and dynamic finish.
