The Grand Cellier d'Or 2019, created by Laurent Champs, is a champagne that reveals all the finesse and precision of Maison Vilmart & Cie.
This cuvée is a blend of 80% Chardonnay and 20% Pinot Noir classified as Premier Cru and sourced from vines in Rilly-la-Montagne that are over fifty years old.
The wines are then vinified and aged in 228-liter oak barrels for 10 months to develop their character. Malolactic fermentation is not carried out in order to preserve a beautiful freshness.
This cuvée reveals a golden yellow color and a fine, abundant effervescence.
The first nose exudes aromas of nuts, coconut powder, and exotic wood. After several minutes in the glass, this cuvée reveals an intoxicating aromatic bouquet composed of vine peach, pear, rhubarb, and frangipane.
The attack on the palate is balanced between freshness and richness, with a touch of acidity that enhances the notes of butter and dried fruit.
The mature aromatic profile of this 2019 Grand Cellier d'Or cuvée from Maison Vilmart makes it a perfect accompaniment to foods such as caviar or firm-textured dishes such as langoustines or white meats.
