In Courmas, in the Petite Montagne de Reims, he cultivates 2.15 hectares using sustainable viticulture practices and has been herbicide-free since 2017. His champagnes are single-vineyard, precise, vinified without artificial interventions, and bottled in limited quantities. Each cuvée tells the story of a specific site, a grape variety, and a vintage. This artisanal approach places the terroir at the heart of the wine.
Among the Simon Rion estate’s iconic cuvées is the Originel. A champagne rooted in the terroir of Courmas, crafted from the three traditional Champagne grape varieties. Vinified in stainless steel and concrete tanks, with a measured dosage, this blended cuvée offers a straightforward, pure, and generous expression of Simon Rion’s work. The Réserve cuvée embodies the estate’s history. This exclusive cuvée is produced using a family-owned solera method. Blended from the three traditional Champagne grape varieties and vinified in stainless steel tanks, it undergoes extended aging on the lees for over eight years.
