The kosher Brut by Roi David is a fruity and lively champagne made entirely by the rabbanical delegates, or Shomrim, under the watchful eye of the cellar-master. From pressing of the grapes, and blending, right up to the final bottling, every operation is strictly controlled.

The vats in which the wine is made are carefully sealed by the Shomrim at the end of each operation and the seal is only broken when the next stage of the winemaking is undertaken by the Shomrim.

All utensils and material are made kosher by a passage in boiling water, to eliminate all impurities.

The storage tanks, after having been perfectly cleaned of tartaric deposits, are purified by 3 successive cold water baths over a period of 24 hours.

The Roi David kosher Brut is made from Pinot Noir and Chardonnay in equal parts. It’s a champagne which offers notes of yellow fruits on the nose and a fresh, vivid and lightly mineral palate.
