A precise blend of 58% Pinot Noir and 42% Chardonnay, sourced exclusively from the House's historic terroirs.

The terroir

The grapes come exclusively from Grands Crus located on the Montagne de Reims and the Côte des Blancs. The deep chalk of the hillsides, combined with generous sunshine, creates a striking contrast: 50% soil / 50% sun. This duality is the basis of the Cristal 2016 style: enveloping maturity and mineral vibrancy of rare precision.

Vinification

Gentle pressing, parcel-by-parcel vinification, then partial aging in barrels to add depth. Malolactic fermentation is blocked to preserve the natural tension of the Chardonnays and the vitality of the fruit. Disgorging after a long aging "sur lattes" (on slats) gives a powdery texture and a salty persistence. The dosage of 7 g/L acts as a balancing thread, linking substance to freshness.

The 2016 vintage

A year of extreme contrasts: a cool, wet spring followed by a hot, dry summer. The harvest, from September 15 to October 1, benefited from bright weather, allowing the grapes to reach perfect maturity. The Pinot Noirs reveal a dense, smooth, and caressing fruitiness, while the Chardonnays retain a chiseled and saline character. On the chalky soils of Aÿ and Avize, the heat emphasized the generosity, but the chalk maintained the acid balance. The result: a full-bodied, precise Cristal with a crystalline purity reminiscent of 2002 and 2012.

Tasting notes

  • Color

    Bright golden yellow. Fine, slow effervescence with a persistent cordon. Luminous reflections, a sign of a wine that is both rich and pure.

  • Nose

    Intense and precise. White flowers, roasted lemon zest, peach, mirabelle plum. Subtle hints of iodine and toast from the aging process. Aeration reveals chalk, hazelnut, and delicate brioche.

  • Palate

    Soft and juicy attack, caressing texture. Sabayon of ripe fruit, chalky energy. The finish is long, salty and crystalline, carried by a tactile vibration of rare finesse.

Food pairing

The purity of Cristal 2016 and its saline tension call for refined cuisine with gentle cooking and chiseled texture. Iodine flavors, white meats, and slightly toasted notes pair perfectly with its balance between richness and precision.

Storage and serving

Storing this vintage

Store in a cool, quiet cellar, between 10 and 12°C, away from light. Store bottles horizontally to preserve the cork and micro-oxygenation. A humidity level of around 70% is ideal. Avoid sudden movements and leave to rest for 24 to 48 hours after transport before serving.

Ageing potential

Optimal window: 2026–2045. In its early years, Cristal 2016 will display tension and citrus brightness. Between 2030 and 2035, the texture will become more satiny, revealing nuances of honey, hazelnut, and gunflint. Beyond 2040, the wine will gain tertiary complexity while retaining the crystalline purity and saline freshness characteristic of this balanced vintage.

Serving

Serve between 9 and 10°C in tulip or universal glasses with a narrow bowl to concentrate the finesse of the bouquet. Do not decant. Allow to breathe for a few minutes before tasting to reveal the interplay between fullness and tension. Keep cool in an ice bucket (2/3 water, 1/3 ice) for gradual cooling.
